Ingredients
4 to 6 boneless, skinless chicken breasts
1 pound cherry tomatoes, halved lengthwise
1/2 pound fresh green beans, trimmed
2 Yukon Gold potatoes, cut into 2-inch pieces
3 tablespoons honey
5 tablespoons balsamic vinegar
2 tablespoons Dijon mustard
4 cloves garlic, finely chopped
2 teaspoons dried rosemary
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
Directions
1. Preheat oven to 425 degrees Fahrenheit. Lightly grease a baking dish. Place the halved cherry tomatoes into the bottom of the baking dish. Place the chicken breasts on top of the tomatoes. Season chicken with salt and pepper.
2. Scatter potatoes and green beans around the chicken.
3. In a small bowl, mix together the honey, balsamic vinegar, Dijon mustard, chopped garlic, rosemary, thyme and olive oil. Stir well with a fork until blended. Pour this mixture over the chicken. Bake for 45 minutes to an hour, or until the chicken and potatoes are cooked through (chicken should be juicy and white in the center).
Pro tip: Shake the chicken breasts in flour and quickly pan-fry over medium heat on both sides for a crispy, brown crust on the chicken breasts. This added step helps to seal in the cooking juices, making for an irresistibly tender result.
