Utilizing everything that you so love about mouth-watering nachos, this dreamy dish is packed with juicy ground beef, chunky salsa, cumin, taco seasoning, sweet corn and spicy jalapenos!
The shorter cook time lets you throw this dish together for weekend game days get-together or for dinner on those days when the morning just wouldn't cooperate (you know what I'm talking about). This wholesome family meal is then finished off with crumbled nacho chips and grated sharp cheddar cheese. Give the kids the delightful shock of their lives tonight by letting them know that nachos are on the menu!

Beefy Nacho Dinner

1 lb (450g) ground beef
1 white onion, sliced
1 oz pack of taco seasoning
1 cup (225g) chunky salsa
1 cup (225g) frozen corn
1 teaspoon cumin
½ teaspoon salt
½ teaspoon pepper
1 jalapeno, finely chopped
2 cups (450g) shredded cheddar cheese
3 cups (675g) crushed nacho chips
Quickly brown the beef in a small frying pan along with the sliced onions and taco seasoning. Pour into the bottom of the slow cooker and pour over the salsa, corn, cumin, salt, pepper and jalapeno. Mix together with a wooden spoon until the ingredients are combined. Cover and cook on high for 3 hours.
Toss together the cheddar cheese and the crushed nacho chips and pour into the slow cooker. Cook uncovered for 15-30 minutes.

Pro tip: Serve with some fresh shredded lettuce and freshly diced tomatoes for a dinner to remember! Feel free to really go wild and have sour cream, diced avocado, freshly chopped cilantro and sliced olives at the ready, too.
