Chocolate whiskey truffles

Preparation time: 15 minutes
Total time: 1 hour-over night chilling time
Serves: 4-6
Ingredients
12 ounces bittersweet chocolate chips
1 cup heavy cream
1 ½ tablespoons whiskey
1 teaspoon pure vanilla extract
½ teaspoon instant coffee (optional)
Toppings:
Pecans or walnuts, finely chopped
Shredded coconut
Cocoa powder
Directions
1. Place chocolate chips in a medium bowl and set aside.
2. In a medium saucepan, bring to a simmer the cream, vanilla, instant coffee, and whiskey over medium heat. Give the mixture a good stir. Be sure not to boil it.
3. As soon as the mixture begins to simmer, pour it over the chocolate chips and allow to set for 2 minutes before mixing.
4. Whisk the mixture together until a smooth ganache forms. Cover with a lid or plastic wrap and let sit in the refrigerator overnight or at least 1 hour until firm.
5. Once firm, use a spoon or ice cream scoop to scoop out the ganache. Gently roll the ganache in your hands to form ½ inch balls. You can do any size you would prefer. Keep in mind that the smaller the balls, the more you will have. (Insert inappropriate comment here)
6. Roll each truffle in your individual toppings. Refrigerate another 30 minutes or until ready to serve.
