Slow cooker cajun shrimp and rice
1 lb. shrimp
1 onion (chopped)
1 bell pepper (chopped)
2 cloves minced garlic
1 6.25 oz. box of long grain and wild rice (with seasoning packet)
28 oz. diced tomatoes
1 tsp. cajun seasoning
14.5 oz. chicken stock
1/4 cup water
1. Add all ingredients to slow cooker except shrimp.
2. Cook on High for 3-4 hours, or Low for 5-6 hours.
3. Add shrimp and cook on low for an additional 15 minutes or until shrimp becomes pink.
Tip: Add some andouille sausage along with shrimp.
