Here's a fast, easy recipe full of flavor to help you during those moments when you feel like there just isn't enough time in a day.
Garlic chicken and veggies with lemon and olive oil

Total Time: 15 minutes
Serves: 2
1 chicken breast, boneless skinless, sliced into thin strips
3 cloves garlic, peeled, chopped
1/2 onion, thinly sliced
1 bell pepper, thinly sliced
2 cups kale, destemmed rough chopped
2 tablespoons lemon, juiced
2 tablespoons olive oil
2 teaspoon salt
pepper to taste
1. Put a sauté pan on high heat, after 1 minute add in oil. Just as the oil begins to slightly smoke add in chicken with 1 teaspoon of salt, keep the heat on high and stir for 2 minutes.
2. Add in garlic, onion, bell pepper, and remaining salt if desired and continue to cook on high for another 2 minutes. Add in kale and cook for another 3-5 minutes. Add in lemon juice and season with pepper.
3. Turn off heat. It's done! Serve and enjoy.
Pro tip: You can make this quick meal with beef or shrimp. It'll cook just as fast and taste just as good!
