How to make vegetarian cauliflower rice and stir fry (video)

Rice and stir fry, they were made for each other. They met in junior high and fell in love, they're now married with three kids and still going strong.
Sadly, rice is a no-go for some people, but they shouldn't have to miss out on such a perfectly matched couple's greatness. So cauliflower comes into the ring and tags out rice, now everyone can get a little of their love. Of course, it's not exactly the same as rice but with this recipe, it's probably as close as you can get.

Vegetarian cauliflower rice and stir fry

Serves: 4
Ingredients
1 medium size cauliflower
1 red bell pepper
1 green bell pepper
1 onion
6 cloves garlic
1 cup green beans, cut into thirds
1.5 cup mushrooms, sliced
1/4 bunch fresh cilantro
1/4 cup soy sauce
1/4 cup water
1 tablespoon cornstarch
1 tablespoon honey
4 tablespoons olive oil or vegetable oil
2 teaspoons salt
Directions
1. Cut cauliflower into small pieces similar to the size of rice. If you have a food processor you can cut more than half the prep time. In a baking pan toss cut cauliflower in 2 tablespoons oil and salt. Cook in the oven for 30-40 minutes at 350 degrees until tender with a slight bite.
2. Make a slurry with cornstarch and water and set aside.
2. Put a large sauté pan on high heat then add in 2 tablespoons of oil. Just as the pan begins to lightly smoke add in garlic and onion, allow to cook for 1 minute.
3. Keeping the heat on medium high add in bell peppers, green beans and mushrooms. Allow to cook for another 4-5 minutes, be sure to keep stirring for even cooking and to prevent burning.
4. Turn the heat to medium then add in soy sauce and honey followed by the slurry. Allow sauce to thicken for another 2-4 minutes while stirring.
5. When sauce has thickened turn off heat, and serve on top of cauliflower "rice." Garnish with cilantro.
Pro tip: I personally love the taste of charred cauliflower, if you do too, try broiling the cauliflower for the last 10-15 minutes to get that smokey roasted taste. Also, you can use any vegetable you like for the stir fry, use what's in season or use your favorite veggies.
