Chicken, Broccoli and Stuffing Hot Pot

2 lbs (950g) chicken breasts
6 oz (170g) stuffing mix
10.5 oz (297g) can cream of mushroom soup
1/2 cup (118g) sour cream
1/3 cup (70ml) chicken stock
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
1 floret broccoli, chopped
In a small bowl, combine the cream of mushroom soup, the sour cream and the chicken stock until well-mixed. Lightly grease your slow cooker and place the chicken breasts in the bottom. Season with salt, pepper and thyme. Place the stuffing mix on top of the chicken breasts.
Pour the sour cream mixture over the stuffing, trying to coat evenly. Place the chopped broccoli on top and cover the slow cooker. Cook on high for 4 hours.

Pro tip: Feel free to play around with the veggie options, as chopped mushrooms, sweet bell peppers, onions and green beans work wonderfully in this dish as well!
