We love an interesting take on a classic dish, and this amazing recipe for sweet and sour pot roast is no exception. The delicious recipe is one of our dream-dishes and soon to be go-to dinners on any given occasion. The basic layering of deliciously hearty root vegetables, topped with a juicy (and cheap) beef chuck roast, and smothered in the easiest homemade sauce you've ever tried, makes this meal a true stand-out on any dinner table.
We like that this meal takes 10 hours to cook. This makes it the perfect dish to prepare in the mornings before heading off to work. Sometimes, the added (albeit hands-off) time is a real bonus, and one of the joys of owning a slow cooker is that it does all of the work for you while you take care of your own workday needs! This dish serves beautifully with a dollop of sour cream for the veggies and some fresh parsley to finish.

Slow Cooker Sweet and Sour Pot Roast

8 hours, 25 minutes
2 lb (900g) beef chuck roast
3 large Yukon gold potatoes, peeled and quartered
4 carrots, peels and roughly chopped
1 large white onion, small diced
3 cloves garlic, crushed
1 tablespoon vegetable or canalo oil
1 teaspoon dried thyme
1 14oz (396g) jar tomato sauce
4 tablespoons brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons apple cider vinegar
1 teaspoon salt
½ teaspoon black pepper
Begin by heating the oil over the stove in a large skillet and browning the chuck roast on all sides. Place the potatoes, carrots, onion, and garlic into the bottom of a 6-quart slow cooker. Then place the browned chuck roast on top.
In a small bowl, combine the thyme, tomato sauce, brown sugar, Worcestershire sauce, vinegar, salt and pepper. Pour this sauce over the pork. Cover the slow cooker and set on low for 8 hours, or until the pork is fork-tender. Serve with the sauce in the bottom of the slow cooker.
Pro tip: To elevate the sauce to something truly out-of-this world, quickly heat up 1/2 cup of red wine in a pan over medium heat until the liquid reduces by 1/3. Pour this reduced wine into the sauce and stir well. Enjoy!
