How to make slow cooker pork shoulder with tangy basil sauce

It's rare that we come across a slow cooker recipe so incredibly simple, yet fancy enough to serve for special occasions. This is surely the case with this outstanding recipe for pork shoulder and tangy basil sauce. This recipe is made simply with a homemade spice-rubbed pork shoulder that cooks to perfection in your slow cooker, along with a mouth-watering fresh basil and lemon sauce that really lifts up the dish in a fabulous way.
We love a great pork shoulder joint as it is super cheap, incredibly tasty, and the go-to meat when it comes to your slow cooker. Pulled pork, while delicious, is just too easy of an option! This week, why not try something a bit outside of the box?
Pork Shoulder with Tangy Basil Sauce

6lb (2.72kg) pork shoulder roast, boneless
6 cloves garlic, minced
¼ cup (60ml) vegetable oil
3 tablespoons Dijon mustard
3 tablespoons brown sugar
2 tablespoons flake salt
2 ½ teaspoons black pepper
2 teaspoons oregano
2 teaspoons thyme
1 tablespoon paprika
1 small white onion, finely chopped
10 oz fresh basil, stems and leaves finely chopped
1 cup olive oil
3 tablespoons oregano (fresh or dried)
1 teaspoon red pepper flakes
1 teaspoon flake salt
2 fresh lemons, juiced
First, prepare the sauce by combining the onion, basil, olive oil, oregano, pepper flakes and salt in a small bowl. Cover with cling film and leave at room temperature to marinate while the pork is prepared and cooked. Squeeze in the lemon juice just prior to serving.
Lightly grease a 4-quart slow cooker and place the pork shoulder inside. In a small bowl, combine the garlic, oil, mustard, sugar, salt, pepper, oregano, thyme and paprika to form a smooth paste. Rub all over the pork, coating well. Cover and cook on low for 7-8 hours. Serve with the basil and lemon sauce.
Pro tip: For some truly incredibly flavor, leave the pork shoulder rubbed and covered in the slow cooker overnight to marinate and set it on low first thing in the morning before work!
