How to make vegan pizza, 4 ways (video)

Whenever someone tells Jenné Claiborne, vegan chef at Sweet Potato Soul, that vegans can't eat pizza, she says, "Oh yeah? Watch me." And then she wows them with not one but four fabulous vegan pizzas.
This recipe will show you how to create a vegan cheese pizza, a margherita pizza, a sweet potato and greens pizza and a sausage pepper pizza. For guided instructions -- and a smile -- watch the SweetPotatoSoul video below.

Vegan pizza (4 ways)
Preparation Time: 1 hour, 30 minutes
Total Time: 1 hour, 45 minutes
Serves: 8 (2 servings per pizza)
Ingredients
Pizza Dough
1 teaspoon sugar
1 packet active dry yeast
1-1/2 cups of warm water
3-1/2 to 4 cups of flour (whole wheat, bread or all-purpose)
Extra flour for kneading
2 teaspoons kosher salt
2 tablespoons + 2 teaspoons olive oil
cornmeal for sprinkling on baking sheet
Toppings for Sweet Potato and Greens Pizza
1 small sweet potato, cut into thinly sliced discs
2 cups chopped greens (e.g.: arugula, kale, beets, sprouts)
3 tablespoons olive oil
Toppings for Vegan Cheese Pizza
1 cup tomato sauce
1 tablespoon Italian spice
1 bag Daiya cheese
Toppings for Margherita Pizza
1 cup tomato sauce
1 cup fresh basil
1 tablespoon oregano
Toppings for Sausage Pepper Pizza
1 cup tomato sauce
1 bell pepper, thinly sliced
2 vegan sausages, sliced
Directions
1. Combine the sugar, active dry yeast and warm water in a glass or bowl, and stir well.
2. Combine flour and salt in mixing bowl, then create a well in the center.
3. Pour the yeast mixture and olive oil into the well, and mix thoroughly -- don't be afraid to use your hands!
4. Flour your kneading surface, then transfer dough and knead lightly. Do not over-knead.
5. Form the dough into a ball and place into an oiled mixing bowl. Cover and let sit for one hour.
6. Prepare toppings.
7. When the dough has risen to about triple its original size, gently knead it again on the floured surface then form another ball.
8. Preheat oven to 500 degrees Fahrenheit (260 degrees Celsius).
9. Cut the large ball into quarters, then form the quarters into smaller balls. Place the four balls onto a plate, cover with a slightly damp towel, and let sit for 10 minutes.
10. Sprinkle cornmeal onto baking sheet. On the prepared baking sheet, press dough balls into thin pizza-shaped discs.
11. Add toppings, olive oil or sauce first.
12. Bake the cheese and margherita pizzas for 10 minutes, and the sweet potato and sausage pizzas for 15 minutes.
13. Cut into quarters and enjoy immediately!
Pro tip: the pizza dough freeze very nicely. Either double or triple the dough recipe, or make one pizza instead of four, then freeze whatever dough you don't use. Simply thaw on a countertop or in the microwave the next time you're ready to enjoy delicious, homemade vegan pizza!
