No-bake chocolate, peanut butter, and oatmeal cookies
Preparation Time: 15 minutes
Total Time: 30 minutes to an hour
Serves: Makes about 30 cookies
Ingredients
1 stick of butter
1 1/2 cups of granulated sugar
1/2 cup milk (almond or regular)
3 tablespoons of cocoa powder
1/2 cup peanut butter
1/3 cup nuts (optional)
1 teaspoon vanilla extract
3 cups old fashioned rolled oats
Directions
1. In a saucepan, melt one stick of butter on medium low. Add sugar, milk, cocoa powder, and peanut butter. Bring mixture to a boil.
2. Remove from heat. Add nuts and vanilla extract. Stir to combine. Then add oatmeal. Mix well.
3. With the help of a large spoon or an ice cream scooper, scoop spoonfuls of the mixture onto wax or parchment paper.
4. Place the cookies in the freezer for 30 minutes to harden.
Pro tip: You can allow the cookies to cool on the cupboard if you don't have room in the freezer. Make sure to allow your mixture to boil on the stove for one minute before removing from the heat. This helps the ingredients combine properly so they set. ​
