Chicken mozzarella pasta with sun-dried tomatoes
Preparation Time: 15 minutes

Serves: 6
Ingredients
8 ounces of Penne pasta
1 (4-ounce) jar sun-dried tomatoes in oil
3 cloves of garlic, minced
1 pound of chicken breast, cubed
1/4 teaspoon of salt
1/2 teaspoon Spanish paprika
1 cup heavy cream or whole milk
1 tablespoon dried basil (or 1/4 cup fresh basil)
1-2 tablespoons cooking oil
Directions
1. Cook pasta according to directions on the package, and set aside one cup of the pasta water. Drain the rest of the water. Set aside.
2. Finely chop sun-dried tomatoes. Set aside.
3. Add paprika and salt to chicken breasts. Saute in an oiled, medium-sized skillet over medium heat. Cook until meat is thoroughly cooked.
4. Add sun-dried tomatoes and garlic. Sautee for a minute or two.
5. Add heavy cream (or milk), to the skillet and allow it to simmer on medium-low until all of the ingredients are combined.
6. Once the sauce thickens, add basil (if you are using fresh basil wait until the end).
7. Add cooked pasta to the sauce and meat. Stir to combine. Slowly add pasta water to thin out the sauce to desired thickness.
8. Remove from heat and top with parmesan cheese and basil before serving.
Pro tip: If you don't have Spanish paprika, regular paprika or chili powder works as a substitute. For a spicier dish, add cayenne pepper.
