Everybody loves a good stir fry! Use the largest wok or sauté pan that you have over high heat to best capture the vegetables' unique flavors in this quick-cooking method. Wise cooks do all of their prep ahead of time to avoid overcooking some stir fry ingredients while prepping others.

Vegan teriyaki noodles and vegetable stir fry
Preparation Time: 10 minutes
Total Time: 30 minutes
Serves: 3-4
Ingredients
Oil (vegetable or sesame)
1 handful gluten-free spaghetti or noodle of choice
2 cups broccoli florets, chopped into small pieces
1 medium carrot, julienne matchsticks
1 red bell pepper, chopped
1 cup mushrooms, de-stemmed and quartered
7 ounces (200g) smoked tofu (optional)
4 tablespoons agave or maple syrup
2 tablespoons gluten-free tamari or soy sauce
Freshly cracked black pepper, to taste
Sesame seeds and spring onions for garnish (optional)
Directions
1. Put on a large pot of water to boil the noodles. When water boils, add noodles and boil until slightly al dente. Strain, rinse, stir in a little bit of oil to keep from sticking, then set aside.
2. While waiting for the water to come to a boil, sauté broccoli and carrots in oil over medium-high heat until broccoli begins to soften.
3. Add bell pepper and sauté until hot but still crunchy.
4. Add mushrooms and tofu and sauté until cooked through.
5. Add agave and cook until vegetables begin to caramelize.
6. Add tamari and let the vegetables soak it up for a few minutes.
7. Stir in the cooked noodles and allow them to soak up more of the sauce.
8. Season to taste with black pepper; garnish with sesame seeds and spring onions.
