Pro tip: You'll need to work quickly, so your ice cream doesn't melt. You can always pop your cake into the freezer for a few minutes if the ice cream softens a bit too much while you're preparing the cake.

No-bake cookies & cream ice cream cake
Preparation Time: 30 minutes
Total Time: 90 minutes
Serves: 10 to 12
Total Time: 90 minutes
Serves: 10 to 12
Ingredients
12-16 pre-made ice cream sandwiches
1 large container of whipping cream
1 tablespoon powdered sugar
Chocolate sandwich cookies
1 large container of whipping cream
1 tablespoon powdered sugar
Chocolate sandwich cookies
Directions
1. Smash up cookies in a sandwich bag. Use a rolling pin to smash them into large chunks.
2 . Softly whip your cream and sugar in a mixer for about a minute. It shouldn't be fully whipped because spreading it will whip it a little more.
3. Spread a spoonful of cream on a plate and layer your ice cream sandwiches on top.
4. Add a layer of cream over the sandwiches followed by another layer of sandwiches. Repeat layers until you've used all of your ice cream sandwiches. Top with a thin coat of cream and freeze for 20 minutes.
5. Once the cream is firm, trim the edges, so you have smooth, flat sides.
6. Add a final layer of cream over the entire cake (including sides and edges).
7. Press cookie crumbles into the cream all over the cake using your hands.
8. Place back in the freezer for one hour before serving.
