One-pot Beef Stroganoff pasta
Preparation Time: 10 minutes
Total Time: 40 minutes
Serves: 4
Ingredients
2 tablespoons of olive oil
2 cups of mushrooms
1/2 cup of onions
2 cloves of garlic, minced
1 pound of ground beef
2 teaspoons of paprika
4 cups of beef stock
8 oz of egg noodles
1/2 cup of sour cream
1 tablespoon of cornstarch slurry

salt & pepper to taste
Directions
1. Heat two tablespoons of olive oil in a large pot.
2. Add mushrooms and season with a bit of salt and pepper (if desired).
3. Add onions and garlic to the pot and allow them to simmer until the onions are semi-transparent.
4. Add ground beef and cook beef until brown.
5. Add paprika, beef stock, and noodles to the pot. Stir to ensure everything is well blended.
6. Cover the dish with a lid, and allow the food to simmer for about 20 minutes.
7. Reduce the heat then add cornstarch slurry and sour cream. Stir until the dish thickens.
8. Serve with a thick slice of bread and enjoy!
Pro tip: For a quick cornstarch slurry, combine 1 part cornstarch with 2 parts water. (You can also use stock or wine for added flavor).
