One-pot cheesy chicken and broccoli rice
Preparation Time: 10 minutes
Total Time: 40 minutes
Serves: 4
Ingredients
1 tablespoon of olive oil
1 small onion, chopped
2 chicken breasts, cut into small cubes
salt and pepper to taste
4 cloves garlic, minced
¾ cup rice
1 can (10 oz) cream of chicken soup
2 to 3 cups chicken broth
2 cups broccoli florets
1 cup cheddar cheese
1 tablespoon of fresh parsley, chopped
Directions
1. Heat your olive oil in a skillet. When the pan is hot, add your chicken and onion. Allow the chicken to brown a bit and the onions to cook down.
2. Add a bit of salt and pepper to taste, and your garlic.
3. Add your rice, soup and broth to the pan. Stir to mix all of your ingredients together. You can add a little more broth as needed.
4. Bring the broth to a boil and then reduce the heat to a simmer. Allow the rice and chicken mixture to cook for about 15 minutes, or until the rice is completely cooked.
5. Add your broccoli and half of your cheese. Stir and allow the cheese to melt. Once the broccoli begins to soften, add the remaining cheese to your dish.
6. Place your skillet under a broiler to finish melting the cheese (and to crisp up the top a bit). Top with parsley before serving.
Pro tip: Make sure your rice is completely covered with broth. You may need to add a little more than the recipe calls for.
