One-pot Italian cream and mushroom chicken
Preparation Time: 10 minutes
Total Time: 45 minutes
Serves: 4
Ingredients
Chicken thighs (or your cut of choice)
Sunflower oil or olive oil
Salt
Black pepper
1 tablespoon dried thyme
1 tablespoon dried basil
4 cloves of garlic
1 or 2 stalks of celery
1 chopped white onion
2 cups fresh mushrooms
A few tablespoons of water
1 cup cream
1/2 to 1 cup ground parmesan cheese.

Directions
1. Heat your pan on the stove with enough oil to completely cover the bottom of the pan. (There should be enough to fry the bottom of your chicken).
2. Add your chicken to the hot pan and season with salt and pepper. Cook for a few minutes, flipping every minute or so until the meat is lightly browned.
3. Add basil, thyme, garlic, celery and onion to your pot. Mix well with a spoon. Cook the meat and spices on medium for about four minutes or until the onions and celery soften.
4. Add mushrooms (just broken with your hand) into the mixture and stir. Add a little water for some extra moisture and mix with a spoon. Cover and let the food simmer for another 5 minutes until the mushrooms soften and break down.
5. Check your chicken to make sure your meat is all cooked through before adding anything else. Once your chicken is cooked, add your cream and mix well. Add your cheese and continue to mix. The more cheese you add, the thicker your sauce will be.
6. Add fresh basil leaves and allow the dish to simmer for one more minute before serving.
Pro tip: Choose a good parmesan cheese you must grate yourself. The decadent flavor will make a world of difference when the dish is complete.
