Burritos are actually a wonderful family meal as they consist of basic protein, veggies and spices, although they can be tumultuous to prepare and can often leave the kitchen in a state of disarray! This recipe for baked burrito casserole is the perfect dish to whip up on a busy weekday night, as you will only need a bowl, a frying pan, and a trusty 3-quart casserole dish this dinner on the table!
Ready in under 45 minutes, this delicious casserole consists of deliciously layered ground beef and onions, sour cream sauce, tortillas and refried beans, leaving you with all of your favorite burrito ingredients without all of the hassle of individual assembly. Baked Burrito Casserole

1 lb (450g) ground beef
1 white onion, chopped
1 oz (28g) taco seasoning
14 oz (400g) can refried beans
12oz (340g) grated cheddar cheese
1/2 cup (115g) sour cream
10.75 oz (304ml) can cream of chicken soup
1 tablespoon olive oil
6 soft flour tortillas
Preheat the oven to 350 degrees Fahrenheit and lightly grease the bottom of a 3-quart casserole dish.
Heat the olive oil over medium heat and brown the beef along with the onion and taco seasoning.
Mix the cream of chicken soup together with the sour cream and pour this into the bottom of the casserole dish. Spread evenly with a wooden spoon.
Spoon the refried beans over the sour cream mixture and spread evenly over the top. Place the flour tortillas over the refried beans, and pour the beef and onions over the tortillas. Sprinkle the cheddar cheese over the beef and place the casserole, uncovered, into the oven for 30 minutes, or until the cheese is melted and the casserole is bubbling around the edges. Serve with a side of yellow rice and salsa.

Pro tip: You can substitute the refried beans for black beans if you prefer. For black beans, quickly heat them up on the stove or in the microwave with 1/2 teaspoon of salt and 1/2 teaspoon of pepper.
