How to make a meatloaf roll (video)

If you love barbecues but want to make something a little different--you are going to fall in love with the meatloaf roll recipe below. This is not your mom's regular meatloaf! While the recipe is simple, a few small alternations take it from good to absolutely wonderful!
The recipe below shows us just how easy it is to jumpstart a regular meatloaf recipe with cheese and bacon. You'll never want to cook meatloaf the ordinary way ever again! Plus, this is a great solution for the cooks who prefer the grill over the over.

5 pounds ground beef
2 teaspoons salt
1 teaspoon pepper
1½ tablespoons garlic powder
1 tablespoon onion powder
2 eggs
½ cup minced celery
1 cup small diced onion
1 pound bacon, cooked and thinly sliced
1 cup rough chopped ham
½ cup mozzarella
1 cup shaved parmesan
¼ cup marinara sauce
If using a grill start your coals. If using an oven preheat to 400°F.
In a large bowl combine ground beef, salt, pepper, garlic powder, onion powder and eggs. Mix well until everything is fully incorporated.
Generously dampen a cutting board or table top with water, this is to keep the meat from sticking to the surface. You can also lay a few pieces of plastic wrap down instead, this makes for easy cleaning and rolling.
Place ground beef mixture onto the surface you'll work on (dampened cutting board/table top or plastic wrap) Spread out the ground beef evenly using your fist or a mallet. Shape it into a rectangle about half an inch thick.
Once shaped brush the surface with some marinara.
Evenly spread celery, onion, bacon, ham, mozzarella and ½ cup parmesan.
Starting from one end of the rectangle begin to roll the meat as you would cinnamon rolls.
Seal the edge and any weak spots/holes by pressing the meat together with your fingers.
If using a grill move all of the coals to one side and gently lay meat roll onto the side without the coals. It will cook on indirect heat. If using an oven gently place on a baking sheet.
Brush with the remaining marinara if you like then allow to cook for one hour or until it reaches an internal temperature of 160°F.
Once cooked through top with the remaining parmesan. Cover grill or close oven and allow to cook for another 10-15 minutes until cheese on top is melted and bubbly.
Remove from grill or oven and allow to rest for 15 minutes.
Slice and serve with mashed or roasted potatoes.
