Nachos — the delicious crunchy meal or snack we all know and love. I can have just plain nachos, nothing but chips and cheese, maybe some pickled jalapenos, and I'd be completely satisfied! Be sure to check out the recipe below.
In this recipe, we take everything we know and love about nachos and put it into a casserole. First, we crunch tortilla chips. Next, we layer browned and seasoned ground beef, black beans, corn and salsa. Finally, we load it all up with cheese. We serve it with sour cream and lettuce to add that extra touch that brings the whole dish together. You can also serve it with a few slices of lime and fresh chopped cilantro to add a little extra tang!

How to make a nacho beef casserole

Ingredients
20 ounces tortilla chips, crushed
1 tablespoon olive oil
1 pound ground beef
1 white onion, thinly sliced
1 ounce taco seasoning
1 14-ounce can sweet corn, drained
1 14-ounce can black beans, drained
4 ounces pickled jalepenos, chopped
8 ounces cheddar cheese, shredded
2 cups mild chunky salsa
¾ cup sour cream
1 wedge iceberg lettuce, shredded
Directions
1. Preheat the oven to 350 degrees Fahrenheit. Spread one-third of the crushed chips on the bottom of a greased 3-quart casserole dish.

2. Heat the olive oil over medium heat in a frying pan. Brown the ground beef for about 5 to 8 minutes.

Add sliced onions and taco seasoning. Pour over the chips.

3. Pour the corn, black beans and pickled jalapenos over the beef and onions.

Mix together with a wooden spoon. Sprinkle half of the cheese over the beef and pour the salsa over the cheese. Spread evenly.

4. Place the remaining tortilla chips over the salsa and sprinkle the remaining cheese on top.

5. Bake in the oven, uncovered, for 20 minutes, or until the cheese is nicely melted.

Serve with cool sour cream and shredded iceberg lettuce.

Pro tip: If you have a nicely maintained spice pantry, it's usually cheaper to make your own spice mixes and store them for later use than to buy premixed versions. To make your own taco seasoning, simply combine 1 tablespoon chili powder, ½ teaspoon garlic powder, ½ teaspoon sweet paprika, ½ teaspoon oregano, 1½ teaspoons cumin, 1 teaspoon salt and ¼ teaspoon red chili flakes. Use as much as desired, and store any remaining mix in a jar or plastic bag for later use.
