Don't let a vegan diet stop you from enjoying hot wings on game day! Canadian couple Lauren and John -- the twosome behind hot for food -- have created a slam-dunk cauliflower-based recipe for vegan "wings," and three different sauces to go with them!
This isn't just cauliflower with sauce on it -- dunking the florets in batter and baking them gives the vegetable a stringy texture similar to chicken, and the high baking temperature helps the batter stick to the cauliflower. Vegan cauliflower wings (3 ways)
Preparation Time: 10 minutes
Total Time: 1 hour
Yield: 4 small or 2 large servings
Ingredients
Batter
4-5 cups of cauliflower florets (about 1 head of cauliflower)
3/4 cup all-purpose or rice flour
1/2 cup non-dairy milk
1/2 cup water
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon cumin
1 teaspoon paprika
1/4 teaspoon ground black pepper
1/4 teaspoon sea salt
Hot sauce
1 tablespoon vegan butter
1 cup hot sauce
Barbecue sauce
Your favorite bottled barbecue sauce
Salt and vinegar sauce
1 tablespoon vegan butter
3 tablespoons apple cider vinegar
1 tablespoon water
Directions
1. Preheat oven to 450 degrees Fahrenheit (232.2 degrees Celsius).
2. In a large bowl, whisk all batter ingredients together until lumps are gone and batter is a medium consistency -- it should be thin enough to drip, but thick enough to stick to the cauliflower. (Rice flour may require a little more water.)
3. Line two baking sheets with parchment paper -- do not use aluminum foil or wax paper.
4. Soak cauliflower florets in batter to ensure all cracks and crevices are filled. Tap off excess batter, then place on baking sheets. Do not allow florets to touch each other.
5. Bake florets for about 25 minutes, turning over halfway through. Because flours and individual ovens vary, this time is approximate; hot for food strongly recommends watching the florets closely while they bake. They are done when golden brown and crispy on all sides.
6. While florets are baking, prepare hot sauce by melting butter and hot sauce into a pan. Stir thoroughly and set aside.
7. Heat barbecue sauce. Set aside.
8. Prepare salt and vinegar sauce by melting butter and adding vinegar and water. Set aside.
9. When cauliflower florets are finished baking, dip them in each sauce as desired and return them to the baking sheet. Salt and vinegar florets need a sprinkling of salt and pepper before going back into the oven. Bake for about 25 minutes again, turning halfway through.
10. After removing florets from the oven for the second time, toss or brush them lightly with the remaining sauce before serving. This adds flavor and moisture.
Serve these wings on game day on a platter with julienned celery and carrots, and plenty of ranch dressing. Be prepared to be asked for more!
