Vegan mozzarella pizza

Serves: 4
Ingredients
1/2 cup + 3 tablespoons water
3/4 teaspoons salt
3 teaspoons organic sugar
3/4 teaspoons instant yeast
2 1/3 cups all-purpose flour
1/8 teaspoon baking soda
1/8 teaspoon salt
1 can of plum tomatoes
3/4 teaspoon Italian herb mix
1.4 ounces tofu
1/2 teaspoon of salt
1 garlic clove
2 tablespoons+teaspoons tapioca starch
1 cup non-dairy milk
Directions
1. In a mixing bowl, combine water, salt, and organic sugar. Whisk until blended. Add in yeast and all-purpose flour. Mix until dough forms.
2. Knead dough and shape into a ball. Place in a covered dish and allow to set for 20 minutes.
3. In a blender, add baking soda, salt, and plum tomatoes. Mix until completely blended
4. Place sauce mixture into a pan and add Italian herbs. Simmer for 6 minutes. Set aside.
5. In a blender, combine tofu, salt, and tapioca starch, non-dairy milk, and garlic.
6. Heat tofu mixture until a cheese-like consistency forms. This should take about 5 minutes. Set aside.
7. Remove dough from covered dish and sprinkle with flour. Press the dough into a pizza crust. Pinch up the edges and poke holes in the base with a fork.
8. Layer the dough with the prepared sauce and tofu mixture. Bake at 480 degrees for 4 minutes. Add fresh toppings.
