Sometimes you just need a dish that's 100% comfort, and that's just what this casserole is. Potatoes are sliced paper-thin before being layered in a casserole dish in between layers of ham and broccoli, all coated in a delicious cheese sauce. When you need comfort, this dish is sure to provide it.
Those who like to plan for cold snowy days will be happy to know that this dish freezes extremely well. You can keep it in the dish it was cooked in and just cover with foil and it will be there for you whenever a helping of comfort is called for.

Potato, Ham, and Broccoli Bake

3 pounds potatoes, peeled and sliced to 1/4" (1/2 cm) thickness
1 cup (250 ml) ham, cooked and roughly chopped
2 cups (250 ml) broccoli, finely chopped
2 tablespoons (30 ml) butter
1/3 cup all-purpose flour
1/2 cup milk
1/3 cup no-sodium chicken stock
2 cups (500 ml) mozzarella cheese, shredded, plus 1 cup (250 ml)
1/2 teaspoon salt
Ground black pepper, to taste
Preheat the oven to 375 degrees Fahrenheit (180 degrees Celsius).
Set aside 1 cup of mozzarella. In a large bowl, combine the rest of the ingredients. Mix really well.
Layer the potatoes in a baking dish so that they lay flat. Evenly distribute all the other ingredients throughout.
Top with the remaining mozzarella.
Place casserole dish into the preheated oven. Bake for 1 hour 20 minutes, or until potatoes are tender and top is bubbling and golden brown.
Allow to cool for 10 minutes. Serve.
Pro tip: Switch up the broccoli in this dish for any other veggie you want - peas are also a nice addition. And if you want to get really different, slice turnips and use those instead of the potatoes! With this one, it's all about what comfort means to you!
