Sometimes you just need a giant pile of nachos in front of you -- crunchy chips, gooey cheese, and fresh toppings. Whether you intend to share the love or not there is a certain craving that only nachos can satisfy, and following a vegan diet does not mean being left out in the cold.

Fully loaded vegan nachos

Serves: 4
Ingredients
Vegan nacho chips
Nacho cheese
3/4 cup cashews
1/2 water (more, if needed)
1/4 teaspoon garlic powder
1/4 teaspoon turmeric
1/4 teaspoon cumin
2 tablespoons nutritional yeast
Toppings
Canned black beans, drained, rinsed and dried
Bell peppers, diced
Green onions, chopped
Tomatoes, diced
Garnish
Avocado, mashed
Green onions, chopped
Directions
1. Preheat oven to 375 degrees Fahrenheit (190.5 degrees Celsius).
2. Blend nacho cheese ingredients in high-powered blender or food processor until smooth.
3. Put chips into large oven-safe bowl. Add toppings in desired quantities.
4. Drizzle cashew cheese over the top, then bake until entire dish is hot and cheese is firmer.
5. Add garnish and serve immediately.
Nachos are always a very personal dish. Personalize yours to taste with any of the following toppings: corn, black olives, jalapeño, cilantro, vegan refried beans, pepperoncini, or vegan chipotle sauce.
