Parmesan potato stacks
Preparation time: 15 minutes
Total time: 70 minutes
Serves: 4 to 6
Ingredients
3 tablespoons butter, melted
2 tablespoons grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon thyme leaves
Salt
Ground black pepper
8 to 10 gold potatoes sliced thin (about 1/16 inch thick)
Directions
1. Preheat your oven to 375 degrees Fahrenheit. Grease a cupcake (or muffin) tin with butter. Make sure you grease it well to keep the potatoes from sticking to the sides of the pan.
2.Use a mandoline slicer to get very thin slices of potatoes.
3. Combine potatoes, melted butter, Parmesan cheese, thyme, garlic, salt and pepper in a bowl. Toss gently to ensure all of the potato slices are coated well.
4. Lay potato slices in even stacks and place them inside the greased muffin tin. Top with a little ground pepper.
5. Bake for about an hour or until the potatoes are soft and the edges are browned. Let them set for a few minutes before removing them from the pan and topping with Parmesan cheese and thyme.
Pro tip: If you don't have a mandoline or food processor slicing blade, use a cheese slicer to get thin slices of potato for this dish.
