Our slow cookers really are our secret weapons in the kitchen, as they have the uncanny ability to produce mouthwatering, belly-warming, finger-licking-good meals with only minimal effort. This stellar recipe (located below) for slow cooker potato and corn chowder is the go-to winter dish this season and one that the family is sure to adore!
This simple, yet incredibly flavorful, chowder is composed of fresh baby red potatoes, corn, onion, cream and spices, all blissfully brought together with the incredible smoky addition of crumbled bacon. A thick chowder is often the most comforting meal in any recipe book, and with only 15 minutes of prep time required for this winning dish, this meal is sure to add some much-needed warmth to the family dinner table this season!

Slow Cooker Potato and Corn Chowder

1 pound baby red potatos, cut into 1-inch pieces
24 ounces frozen corn
1 white onion, small diced
2 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 teaspoon dried thyme
3 cups chicken stock
1 1/2 cups cream or half-and-half
1/2 cup milk
8 strips smoked bacon, cooked and crumbled (optional)
Place the chopped potatoes, frozen corn and onion in the bottom of a 4-quart slow cooker. Add the flour, salt, pepper, garlic powder and thyme and stir to combine. Pour in the chicken stock.
Cover and cook on high for 3 to 4 hours, or on low for 7 hours.
Once cooked and the potatoes are tender, pour in the cream, milk and crumbled bacon. Stir with a wooden spoon to combine.
Cover and cook on high for another 15 minutes.
Pro tip: This soup is a brilliant excuse to use up any leftover cooked chicken (or turkey) in the fridge. Simply shred up your chicken and throw it in the soup along with the milk and cream to heat through before serving!
