Low-carb egg roll in a bowl

1 pound ground pork
2 tablespoons soy sauce
1 tablespoon sesame oil
1½ teaspoons sugar
1 tablespoon canola or vegetable oil
1 cup diced onions
4 cloves garlic, minced
1 tablespoon grated fresh ginger
2 cups thinly sliced green cabbage
1 cup thinly sliced carrots (like matchsticks)
2 teaspoons rice wine vinegar
In a large bowl, add pork, soy sauce, sesame oil and sugar. Mix well until everything is fully incorporated.
Heat oil in a large saute pan on medium-high heat. Add onions, garlic and ginger. Cook for 3 to 5 minutes, until onions have softened and garlic and ginger are fragrant.
Add pork and saute until browned and fully cooked, 5 to 10 minutes. Adjust heat as needed.
Add cabbage and carrots. Cook for 5 to 8 minutes, until cabbage has slightly softened.
Turn of heat. Stir in rice wine vinegar.
Garnish with sliced green onions, if desired.
Tip: You can use 3 cups of ready-made coleslaw mix in place of the cabbage and carrots!
