This twist on the classic grilled cheese sandwich will leave you hungry for more and perhaps a little less depressed about the cloudy skies.

Ultimate grilled cheese sandwich
Preparation Time: 5 minutes
Total Time: 15 minutes
Serves: 1
Ingredients
2 thick slices of white bread
Butter
Cheddar cheese (or your favorite melting cheese)
Directions
1. Butter both sides of each slice of your bread.
2. Shred your favorite cheddar cheese, place it on your bread and squeeze it together.
3. Cook your sandwich on medium-low heat for about three minutes each side. Remember to place some weight on it, for example with a bottle as shown in the photo above or in the video. This trick will keep your grilled cheese as flat as possible.
4. Remove your sandwich and grate a layer of cheese into your hot pan. Place your sandwich back on top. Cook for another minute and a half.
5. Add a tiny pinch of cayenne pepper to the cheese and sandwich.
6. Slide your spatula under the layer of cheese and pull up from the pan. Take about 30 seconds to move it, then flip before plating. Your cheese will dry and give you a crown shape.
7. Repeat step four and cheese up the other side. Let your sandwich cool for about two minutes before chowing down.
