Crispy roasted potatoes
Preparation Time: 25 minutes
Total Time: 2 hours, 15 minutes
Serves: 8
Ingredients
3 tablespoon unsalted butter, melted
3 tablespoon extra-virgin olive oil
4 pounds potatoes, peeled
4 shallots, thickly sliced lengthwise
Coarse salt
1/2 to 1 teaspoon red pepper flakes (optional)
8 sprigs thyme
Directions
1. Preheat your oven to 375 degrees.
2. Slice four pounds of potatoes as thin as you can get them using a mandolin or a sharp knife and set aside.
3. Combine your butter and olive oil in a bowl.
4. Brush the bottom of a round baking dish with your olive oil/butter mixture.
5. Stand your potatoes straight up (on edge) around the baking dish. Continue layering your potatoes in until the pan is full.
6. Sprinkle salt between the layers of potatoes and a little on the top. Add some hot pepper flakes.
7. Randomly place your sliced shallots in between potatoes, making sure to spread them out, so their flavor spreads out as well.
8. Brush the rest of your oil and butter over the top. Pay attention to ensure every single piece of potato is coated.
9. Bake for 1 hour and 15 minutes. Place thyme sprigs on top of the dish and cook for 35 minutes more until browned.
Serve warm.
Pro tip: The thinner you slice your potatoes, the crispier they will be when the dish is finished cooking.
Pro tip: Try seasoning your potato slices in a bowl with the salt and the red pepper (if using any) to make it easier.
