Country Sausage Gravy

Ingredients
1 tablespoon vegetable or canola oil
1½ pounds breakfast sausage, crumbled
½ cup butter
1 cup diced onion
6 cloves garlic, minced
¾ cup flour
6 cups beef stock or broth, no sodium
1 teaspoon seasoned salt (or plain salt)
1 teaspoon pepper
1 cup cream
Directions
1. Heat oil in a pot on medium-high heat. Add sausage. Saute for 10 to 15 minutes, until sausage is cooked. Strain excess oil and set sausage aside.
2. Using the same pot, melt butter on medium heat. Add onions and garlic. Cook for 3 to 5 minutes, until onions are tender.
3. Add flour to make a roux. Cook roux for 5 to 10 minutes, stirring constantly.
4. Slowly whisk in beef stock to prevent lumps. Simmer for 10 to 15 minutes, until thickened. Adjust heat as needed.

5. Whisk in salt, pepper and cream.
6. Return cooked sausage to the pot. Simmer for another 10 to 15 minutes.
