One-pot Olive Garden's Zuppa Toscana copycat recipe
This copycat recipe is another one-pot wonder. Being able to make an entire meal in one pot is a busy family's lifesaver.

Total Time: 60 minutes
Serves: 6
Ingredients
1 lb Italian sausage (spicy if you prefer more heat)
5-7 slices of bacon, diced and fried
2 large Russet potatoes, washed and cubed
2 cups fresh kale, chopped
1 cup heavy whipping cream or evaporated milk
4 cups water
2 cups chicken broth
1 medium onion, chopped
2-3 cloves of garlic, minced
Salt and pepper
Parmesan cheese for garnish (optional)
Directions
1. Clean and cube your potatoes and set them aside for later. Thoroughly wash the kale and dice the onion.
2. In your pot, brown your Italian sausage until completely cooked. Drain the fat.
3. Add the diced onion, minced garlic, chicken broth, and water. Once it's boiling, add the cubed potatoes. Cook for about 10-15 minutes, or until the potatoes are soft.
4. Add the kale and bacon, and garnish with salt and pepper to taste.
5. Once it boils again, add the cream and let it simmer for 10 minutes.
6. Garnish with Parmesan cheese and serve.
Pro tip: Try adding some red pepper flakes by the end to add a little hit to the soup.
