How to make healthy avocado chicken burritos with cilantro sauce (video)

Among all of the flavors packed into this tasty burrito, there is one you probably aren't expecting: pineapple.
Tatyana Nesturek of TatyanasEverydayFood notes that your guests may not even be able to tell there is pineapple in the filling. "That pineapple is very subtle, but it's going to have your guests asking you 'What did you put in your chicken burritos? They taste so good!'" Nesturek says in the video below. Healthy avocado chicken burritos with cilantro sauce
Preparation time: 30 minutes
Total time: 35 minutes
Serves: 4
Cilantro sauce
1 cup sour cream or Greek yogurt
1/2 large avocado
2 cloves garlic
1/2 teaspoon salt
Large bunch fresh cilantro, or to taste
2 tablespoons olive oil
1/2 tablespoon vinegar
Avocado chicken burritos
2 chicken breasts (or 4 chicken thighs), cubed
Olive oil
1 large shallot (or red or yellow onion), diced
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon chili powder
Black pepper to taste
1/4 cup crushed pineapple, canned
1 1/2 cups mozzarella cheese, shredded
1 large avocado, cubed
4 large flour tortillas
1. Combine all sauce ingredients in food processor and puree until a creamy, smooth texture. Pour into small serving bowl and set aside.
2. Drizzle olive oil into frying pan and heat to medium. Add cubed chicken and cook until browned, 7 to 8 minutes.
3. Add shallot and garlic, and then spices (salt, paprika, cumin, chili powder, pepper) and pineapple. Stir thoroughly and cook for another 5 minutes.
4. Assemble the burritos. Slather a teaspoon or two of cilantro sauce onto the tortilla and spreading it evenly from the center, leaving the edges dry. Reserve remaining sauce.
5. Sprinkle a small handful of mozzarella cheese onto the sauce. Spoon one-fourth of the chicken mixture onto the cheese, followed by one-fourth of the cubed avocado and another sprinkle of cheese.
6. Fold tortilla — first one side, and then the other. Fold up the bottom and roll upward (folding in the sides as necessary) until it is completely wrapped. Push lightly on the top of the burrito to spread the filling and help keep the tortilla closed.
7. Repeat steps 4 to 6 until ingredients are gone and you have four wrapped burritos.
8. Heat indoor grill (or frying pan) to medium heat. Place burritos on the grill and give them a gentle squish into place. Heat for 6 to 10 minutes, turning over halfway through (if using a grill, you should have clearly visible brown grill marks).
9. Serve hot burritos with remaining cilantro sauce for dipping.
If you or your guests have the "soap gene" and hate cilantro, don't despair. Although cilantro — particularly in Mexican-inspired dishes — can be difficult to substitute for, there is an alternative that should work well for the sauce used in this recipe: Simply substitute lime juice (2 tablespoons or to taste) for the cilantro and vinegar. The result will have a different flavor but is still a bright, fresh complement to the flavor-packed burrito!
