Vegetarian spinach balls

Ingredients
1 box seasoned stuffing mix
1/2 teaspoon garlic powder
1/2 cup melted butter
1 1/4 cup grated extra sharp cheddar cheese
6 beaten eggs
2 boxes of 10-ounce frozen, chopped spinach
Directions
1. Preheat oven to 350° and then thaw frozen spinach. Break apart and squeeze moisture out of the spinach until it's dry and set aside.
2. In a large mixing bowl, pour in stuffing mix and sprinkle garlic powder over it.
3. Melt butter and set aside, then crack and beat eggs into a separate mixing bowl.
4. Pour melted butter and eggs over the stuffing mixture and add shredded cheese.
4. Using a large spatula, mix ingredients together until they are fully combined. Let the mixture rest a few minutes, so it sets up more easily.
5. Using a tablespoon, scoop mixture and roll between your fingers until you have a ball shape.
6. Place evenly spaced apart on a baking sheet and bake for about 15 minutes. Serve with dipping sauces to your taste, if desired.
