Healthy lemon baked salmon

3 tablespoons extra virgin olive oil
4 salmon fillets, 5 to 6 ounces each, skin on or off (your preference)
1 teaspoon salt
1 teaspoon pepper
4 cloves garlic, thinly sliced
2 tablespoons chives, thinly sliced
2 lemons, thinly sliced
2 tablespoons fresh parsley, finely chopped
Heat oven to 325 degrees Fahrenheit.
Drizzle olive oil over salmon. Rub with fingers to coat all sides.
Evenly season all sides with salt and pepper.
Place each piece of salmon skin side down on individual pieces of parchment paper or foil.
Evenly spread garlic and chives on top of salmon.
Top each salmon with 2 to 3 slices of lemon.
Loosely fold parchment paper or foil into small a pocket enclosing the salmon.
Gently place the pockets onto a baking sheet. Bake for 20 to 25 minutes.
Remove from oven. Carefully open the foil. Garnish with fresh parsley on top.
Tip: Allow your salmon to rest like you would a proper steak. Remove from oven at medium rare (12 to 15 minutes), and then allow to rest in pocket for 15 minutes. This will carry over to a perfect medium-cooked salmon. The inside will be flaky and moist without being overcooked.
