How to make slow cooker garlic Parmesan chicken and potatoes (video)

This simple recipe for garlic Parmesan chicken is one that you will love after the first time you make it. Sear and add chicken to the slow cooker with potatoes, and in about four hours you'll have a wonderful dinner.
I prefer to use bone-in chicken thighs, as they have the most flavor. But feel free to use chicken breasts for a healthier alternative.

Slow Cooker Garlic Parmesan chicken and potatoes

4 tablespoons canola oil
2 pounds bone-in, skin-on chicken thighs
2 teaspoons salt
2 teaspoons black pepper
1 pound small red bliss potatoes, cut into quarters
2 tablespoons butter, small diced
1 small yellow onion, thinly sliced
3 sprigs fresh thyme
2 bay leaves
8 cloves garlic, minced, divided
1½ cups shaved Parmesan cheese, divided
2 tablespoons parsley, finely chopped
In a large skillet, heat oil until hot.
Meanwhile, season chicken with salt and pepper.
Sear chicken, skin side down, for 4 minutes until golden brown. Flip chicken and sear for another 4 minutes.
Remove chicken from pan. Discard oil.
Place potatoes, butter, onion, thyme, bay leaf, half the garlic and 1 cup Parmesan cheese in the slow cooker. Mix well. Place chicken on top.
Mix together remaining garlic and Parmesan. Sprinkle evenly over chicken.
Cover and cook on high for 4 hours, or on low for 7.
Garnish with parsley and serve.
