Slow Cooker Parmesan Chicken & Potatoes

Ingredients
4 tablespoons canola oil
2 pounds bone-in, skin-on chicken thighs
2 teaspoons salt
2 teaspoons black pepper
1 pound small red bliss potatoes, cut into quarters
2 tablespoons butter, small diced
1 small yellow onion, thinly sliced
3 sprigs fresh thyme
2 bay leaves
8 cloves garlic, minced, divided
1½ cups shaved Parmesan cheese, divided
2 tablespoons parsley, finely chopped
Directions
1. In a large skillet, heat oil until hot.
2. Meanwhile, season chicken with salt and pepper.
3. Sear chicken, skin side down, for 4 minutes until golden brown. Flip chicken and sear for another 4 minutes.
4. Remove chicken from pan. Discard oil.
5. Place potatoes, butter, onion, thyme, bay leaf, half the garlic and 1 cup Parmesan cheese in the slow cooker. Mix well. Place chicken on top.

6. Mix together remaining garlic and Parmesan. Sprinkle evenly over chicken.
7. Cover and cook on high for 4 hours, or on low for 7.
Garnish with parsley and serve.
