How to make cowboy potato casserole (video)

You may know this casserole by another name (Tater Tot casserole). This family favorite is loaded with meat, potatoes, beans and cheese. It’s impossible to go wrong, and it’s almost impossible to have leftovers, too!
What I love about this dish is how easy it is to put together. In less than 10 minutes, you can brown your meat, throw everything into a casserole dish and enjoy a homemade meal 30 minutes later. The flavors melt together, resulting in a delicious and homey-tasting meal. This is a perfect dish for a family dinner when it’s snowing outside.

Cowboy Potato Casserole

1 pound ground beef
1 14-ounce can red kidney beans, drained and rinsed
1 15-ounce can corn, drained
1 10.75-ounce cream of mushroom soup
1 cup shredded cheddar cheese, divided
1/2 cup whole milk
1/4 cup sour cream
3/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 16-ounce bag frozen Tater Tots
Preheat oven to 375 degrees Fahrenheit. Grease a 9-by-13-inch baking dish and set aside.
In a large saute pan, cook the ground beef until it is browned through.
Drain the grease and add the kidney beans, corn, cream of mushroom soup, half the cheddar cheese, milk, sour cream, onion powder and garlic powder. Stir to combine.
Place half of the Tater Tots in the prepared baking dish. Cover with the beef mixture and top with the remaining Tater Tots.
Top with the remaining 1/2 cup of cheddar cheese.
Bake, uncovered, for 25 to 30 minutes, until the cheese is bubbly.
