How to make slow cooker chipotle potatoes

These chipotle potatoes are full of flavor. Chipotle powder and lime juice make the perfect combination of smokiness with a little zest! Green onions add depth and fresh cilantro mixed in at the end brings it all together.

Slow cooker chipotle potatoes

2 hours 45 minutes
1 sheet parchment papaer
2 pounds red potatoes cut into quarters
2 tablespoons olive or vegetable oil
1 tablespoon chipotle powder
2 teaspoons salt
1 teaspoon pepper
1 bunch green onion thinly sliced
1 lime juiced
¼ cup cilantro rough chopped
Line a 6 quart slow cooker with parchment paper. Add in potatoes and drizzle oil on top. Season with chipotle powder, salt, pepper and green onions then mix.
Cook on high for 2 hours and 30 minutes.
Drizzle lime juice over top then add in cilantro. Mix well and serve.
