Throw meat and veggies in a slow cooker to indulge in this regional favorite

This dish is known as "New Mexico Stew" and once you try it you'll instantly know why! It has all the amazing southwest flavors that you love, in one dish that's surprisingly simple to make in a slow cooker. Not only does the dish have hearty veggies and meat, but it kicks it up a notch with green chilis as well.

New Mexico Stew

2 pound stew meat
salt and pepper to taste
1 tablespoon Canola Oil
5 potatoes, medium diced
6 carrots, medium diced
2 4.5oz. cans chopped green chilies.
1.5 lbs. pork sausage removed from casing and crumbled
In a 6 quart slow cooker add in stew meat and season with salt and pepper
Add in the remaining ingredients from canola oil to green chillies. Mix well.
Top with sausage and cook on high for 4 hours or on low for 6 hours.
Gently mix then serve with warm bread.
