How to make slow cooker chipotle meatballs

These spicy chipotle meatballs will knock your socks off, and they're so easy to make! These are the perfect party snacks for the next birthday gathering, pool party or tailgater. The chipotle chili powder adds a wonderfully smoky flavor with just the right amount of spice. The cilantro cream dipping sauce adds an amazing creamy zip to the meatballs. They are so good that you might just need to make extra for those hungry mouths!
When mixing the meatballs, I like to use equal parts ground pork and extra-lean ground beef for more depth of flavor. Don't forget the cool and creamy dipping sauce! Sour cream, cilantro, lime juice and cumin make this sauce the perfect complement to the spicy meatballs. Enjoy!​

Slow cooker Chipotle meatballs

1 pound ground pork
1 pound extra-lean ground beef
5 cloves garlic, minced
¼ cup breadcrumbs
2 whole eggs, scrambled
1½ tablespoons chipotle chili powder
1½ tablespoons salt
1 14.5-ounce can diced tomatoes
In a large mixing bowl, combine all the ingredients from ground pork to salt. Mix thoroughly until all ingredients are evenly combined. Form meatballs 1 inch in diameter. Gently place in the slow cooker.
Pour diced tomatoes over meatballs.
Set slow cooker to high and cook for 4 hours.
Tip: Serve with cilantro cream dipping sauce: In a small mixing bowl, combine 2 cups sour cream, ½ cup finely chopped cilantro, 1 teaspoon cumin,1 tablespoon lime juice and 1½ teaspoons salt.
