Unlike most kids, when I was young I actually loved eating broccoli. Just steamed plain, it was something I really enjoyed. My brothers, on the other hand, always needed something else to go with it. The recipe below is inspired by my mom's cheesy broccoli that she made for my brothers.
I keep the recipe really simple with just five ingredients, plus salt and pepper. I start with broccoli, cream cheese, salt, pepper and chicken broth. You can use vegetable broth to keep the dish vegetarian if you prefer. The broccoli slowly cooks until tender, and then you add cheddar cheese and sour cream to turn the soup into a creamy, cheesy delight.

Slow Cooker Cheesy Broccoli Soup

Ingredients
2 pounds broccoli, roughly chopped
½ cup cream cheese
2 quarts low-sodium vegetable or chicken broth
1½ teaspoons salt
1 teaspoon pepper
1 cup sour cream
3 cups cheddar cheese
Directions
1. In a 6-quart slow cooker, add broccoli, cream cheese, broth, salt and pepper.
2. Cook on high for 2 hours.

3. Add sour cream and cheese. Stir until cheese is melted in thoroughly.
4. Use an immersion blender to pulse the soup to desired texture, or serve as is with toasted bread.
