The recipe is super easy to make, and it stores really well. I like to make it it the morning and have it for lunch later in the day.
The combination of red wine vinegar and olive oil in this salad is spectacular. English cucumbers are deliciously crunchy, and the smooth and creamy avocado and perfectly ripe sweet heirloom tomatoes all go so well together.
