This Mexican pizza bubble up casserole is the perfect way to feed a crowd. The crispy biscuits on the bottom will make it taste like pizza but with toppings that will satisfy any taco craving. The recipe below couldn’t be easier to make, with only 5 minutes of prep you’ll be able to whip this up in no time and have it on the table in an hour.
I like to make my own taco seasoning because it has less sodium than its packaged counterpart, but feel free to use the packet seasoning. If you can’t find diced tomatoes with green chilies, you can substitute a jar of your favorite salsa, just make sure that you pass it through the strainer first to remove excess liquid.
1 10-ounce can diced tomatoes with green chilies, drained
1 1-ounce packet taco seasoning, or make your own (see below)
3/4 cup water
2 cups shredded Mexican cheese blend
Optional garnishes: shredded lettuce, salsa, sliced olives, sour cream, guacamole, chopped cilantro, or sliced green onions
Preheat the oven to 375 degrees F and grease a 9x13 casserole dish and set aside.
Remove the biscuits from the can and cut each into 8 wedges. Arrange the wedges evenly across the bottom of the prepared casserole dish and set aside.
Meanwhile, cook the beef in a large skillet over medium-high heat until it is browned through, about 10 minutes. Add the drained tomatoes with chilies, taco seasoning, and water. Bring the mixture to a simmer and cook until mixture is thickened, about 3 minutes. Pour the beef mixture over the top of the biscuits and sprinkle with the cheese.
Bake for 45 minutes, until the cheese is melted and the mixture is bubbling. Allow the casserole to sit for 5 minutes before slicing and serve with the garnishes of your choice.

Pro Tip: You can make your own taco seasoning by combining 1 teaspoon each of cumin, chili powder, paprika, oregano, garlic powder, and onion powder, and salt.
