Potatoes dishes can old sometimes, I absolutely love potato gratin but sometimes I want something with a little more zing. The recipe below is the perfect recipe for that! I make this all the time at home for myself or for friends or family.
Start of by slicing the potatoes very thinly, I like to use a Japanese mandolin for this. Then next step is to simply mix green chilies, fresh lime juice, chopped cilantro, cream cheese and water together in a bowl. This all gets tossed together with potatoes, salt and pepper and into the slow cooker it goes. 3 hours on high and you'll have your new favorite potato dish!

Slow Cooker Green chili potatoes

3 4oz can green chiles
juice of 1 lime
3 tablespoon fresh rough chopped cilantro
1 cup cream cheese
¼ cup water
2 pounds russet potatoes peeled and thinly sliced
1 teaspoon salt
½ teaspoon pepper
1 cup mozzarella cheese
In a bowl mix together green chilies, lime juice, cilantro, cream cheese and water.
Season potatoes with salt and pepper and mix well.
Toss the potatoes evenly with the cream cheese mixture then place the potatoes in a 6 quart slow cooker. Make sure the potatoes and laying flat on each other.
Top with mozzarella cheese.
Cook on high for 3 hours then serve.
