Potatoes are a staple vegetable in many homes. In the recipe below, we use Yukon Gold potatoes to make an incredibly simple and delicious side dish. You can also eat them as a full meal all on their own. I love how simple this is to prepare; there is no need to peel or cut the potatoes. All you need to do is give them a wash.
This is truly one of my favorite potato recipes. I love the way the ham cooks slowly with the onions and garlic, building a robust flavor. Sometimes I'll even add a sprig of fresh rosemary. I suggest giving that a try if you want to add some earthiness to the recipe. Either way, have fun with this recipe, and serve the potatoes with cheese and sour cream if you're feeling like taking it to the next level!
