How to make oven-baked easy chicken tacos

Crunchy tacos are my favorite!! I can seriously eat them any day of the week. I love to load them up with all the fixings but they're just as good as they are right out the oven. In the recipe below we make a super delicious oven baked taco with chicken. You can do this recipe with any meat you like and won't ever be disappointed.
We start of by sautéing onions and garlic in olive oil. Then we add in the taco seasoning packet and let that cook with the onions and the garlic for another minute two. This helps bloom all the seasonings so their flavor really comes out in the dish. Chicken is then added along with drained diced canned tomatoes and green chiles. We let this all simmer together and assemble the tacos with refried beans in the casserole loaded with cheese. Just 15 minutes later and you'll have some of the tastiest simplest tacos ever.

Oven-baked easy chicken tacos

1 tablespoon olive oil
1 onion small diced
5 cloves garlic minced
1 1oz packet taco seasoning
3 cups cooked shredded chicken
1 14.5oz can diced tomato, drained
2 4.5oz can Green Chiles
1/4 cup fresh rough chopped cilantro
10-14 crunchy Taco Shells
1/2 can Refried Beans
2 cups shredded Mexican Blend Cheese
Optional toppings:
shredded lettuce
salsa
sour cream
pickled jalapeños
Preheat oven to 400° F
Put a saute on medium high heat. Add in oil, onions and garlic. Cook for 2-3 minutes until onions are tender.
Then add in taco seasoning, cook for another 2 minutes.
Add in chicken, tomatoes, green chiles. Bring to a simmer and cook for 3-4 minutes. Turn off heat then mix in cilantro.
Line a casserole dish with taco shells. Use a spoon to add refried beans to the bottom of each shell.
Then spoon in chicken mixture.
Top with cheese then bake in oven for 15 minutes or until cheese is melted and bubbly.
Serve as is or with your favorite taco toppings!
