Barbecue pulled chicken sandwiches can get messy — but, oh, what a beautiful mess. Sticky, sweet and tangy and always filling! In the recipe below, we make a super-simple barbecue pulled chicken sandwich that takes almost no time at all to put together.
We use our favorite barbecue sauce for this recipe; feel free to use your favorite instead. Chicken thighs are perfect for this recipe, since the dark meat is moist, naturally tender and hearty. It shreds easily after cooking and holds the sauce perfectly. We also use cheddar cheese, but feel free to use whatever cheese you like. If you're feeling like an extra zing, add some coleslaw as well!

Slow cooker BBQ pulled chicken sandwiches

2 pounds boneless, skinless chicken thighs
1 cup Sweet Baby Ray's Barbecue Sauce
8 ounces cheddar cheese, shredded
1 8-pack of hamburger buns
In a 6-quart slow cooker, add chicken thighs and barbecue sauce. Stir to combine.
Cover and cook on low for 3 hours.
Use two forks to shred the chicken right in slow cooker, then mix with the sauce.
Spoon onto the buns and top with cheddar cheese.
Serve with sweet potato fries.
Tip: Toast the buns in the oven with butter and/or serve with slaw for that extra zing!
