With a loaded potato, the humble tuber shines at center stage with help from the best potato company there is: savory ground beef, bacon and cheese. In the recipe below, we take what we know and love about a loaded potato and turn it into a casserole and then some!
Start by cutting your potatoes however you like. In this recipe, we prefer dicing the potatoes, but you can slice them if you want. Brown the ground beef with onions and garlic to build more of that delicious flavor. Mix the cooked ground beef with potatoes, cream cheese, cheddar cheese, green onions and bacon (optional), and into a casserole dish it goes. Topped with more cheese and served with sour cream, this loaded potato casserole will always be a hit at the dinner table!

Loaded Potato Casserole

3 pounds potatoes, peeled and medium diced
1½ pounds ground beef
1 onion, small diced
2 tablespoons minced garlic
8 ounces cream cheese, softened
3 cups shredded cheddar cheese
1 cup sour cream
1 bunch green onions, thinly sliced
12 ounces bacon, cooked and chopped (optional)
Preheat oven to 375 degrees Fahrenheit.
Brown ground beef with onions and garlic, and season with salt and pepper. Drain any excess oil if needed.
In a bowl, mix potatoes, cooked ground beef, cream cheese, half the cheddar cheese, half the green onions and the bacon (optional). Season with salt and pepper.
Transfer potato mixture into a casserole dish. Sprinkle the top evenly with the remaining cheddar cheese.
Bake for 45 minutes to an hour, until potatoes are fully cooked.
Serve with sour cream.
