I've said it before, and I'll say it again - I can only eat so many eggs on this low-carb, Keto diet. Sometimes I feel like Bill Murray in Groundhog's Day and every day starts with a scrambled or fried egg. They're a great source of protein and healthy fats, but isn't there another way? Why yes, there is! The recipe below is a great way to break your fast from eggs.
Both wild-caught salmon and avocados are great sources of healthy fats, which are essential to your success on the Keto diet. This avocado boat whips up so quickly, you'll have no problem making it on weekdays before work, too.

Salmon and Avocado Boats

1 avocado, cut in half and pitted
Salt and pepper, to taste
2 ounces smoked salmon
1 ounce cream cheese
1/4 red onion, thinly sliced
1/4 cup arugula
2 tablespoons olive oil
1 lemon, juiced
Season the avocado halves with salt and pepper and set aside.
In a small food processor, combine the smoked salmon and the cream cheese. Pulse until well combined.
Place the salmon mixture on top of the avocado halves. Top with the thinly sliced red onions and arugula.
Drizzle the boats with the olive oil and lemon juice.
