Cauliflower grilled cheese

Did you know that you can make "bread" out of nothing but cauliflower and some eggs? Talk about a great way to get an extra serving of vegetables! Technically, the recipe below makes more of a crust than a bread, but it tastes great and this is a great way to make sandwiches if you're on a low-carb diet like keto.
If you're not in the mood for grilled cheese, skip the broiling part and stuff the slices with your favorite sandwich toppings. Be careful, though, because the cauliflower crust is pretty fragile. You can also use the cauliflower crust recipe to make low-carb pizza crust or breadsticks, too, by simply shaping the dough into different shapes.

1 medium head of cauliflower, stem removed
2 tablespoons almond meal
1 tablespoon nutritional yeast
1 large egg, beaten
1 teaspoon dried oregano
1/8 teaspoon garlic powder
1/2 cup shredded cheese, like cheddar or colbyjack
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
Cut the cauliflower into small florets and place them into a food processor. Pulse until they are small crumbs, half the size of a grain of rice.
Place the cauliflower in a large, microwave-safe bowl.
Cook the cauliflower in the microwave for 2 minutes. Stir and cook for 3 more minutes. Stir again and cook for 5 minutes. Stir once more and cook for an additional 5 minutes. At this point, the cauliflower should be slightly moist but appear dry and clumped.
Set the bowl aside and allow it to cool slightly. Once cool, add the almond meal, nutritional yeast, egg, dried oregano, and garlic powder. Stir until the mixture forms a smooth paste.
Divide the dough into 4 equal parts and shape each part into a square piece of "bread," about 1/2 inch thick.
Bake for 30 minutes, until golden brown.
Place the cheese on top of the "bread" slices and turn the broiler on high.
Broil for 2 minutes, until the cheese is melted and slightly browned.
Using a spatula, carefully turn the slice over onto another slice so it creates two sandwiches.
Serve and enjoy!
Pro-tip: Squeeze the cauliflower of its water after you microwave it, this will make it easier to pack together.
